Sesame Balls (Ma Yuan Tuan)
A traditional Hunan snack made from glutinous rice flour dough wrapped around a red bean paste filling, rolled in sesame seeds, and deep-fried until golden brown. Crispy on the outside and tender within, with a sweet, fragrant flavor.
Ingredients
Glutinous rice flour batter (for making the skin)
to taste
Red bean paste filling (for wrapping as filling)
to taste
Sesame seeds (to coat the surface)
to taste
Peanut oil (for frying, heated to 60% hot / medium-hot)

Frying
Place the sesame ball dough into oil heated to medium-hot (about 60% of smoking point). Gently flip with a spatula. Once they puff up and hold their shape, keep flipping continuously with the spatula. Fry until thoroughly cooked and golden brown, then remove.

Transfer to a serving plate and serve immediately.
