Ingredients

milk 600 ml
fine granulated sugar 30 g
cornstarch 4½ tbsp
almond extract (if available) a pinch
orange juice (100% juice) 400 ml
fine granulated sugar 10 g
powdered gelatin 4 g
cold water (for soaking gelatin) 2 tbsp
blueberries, strawberries to taste each
chervil to taste

Instructions

1

Preliminary Preparation

Sift the powdered gelatin into cold water using a sieve, and let it soak.

2

Make the Milk Jelly Mixture

Combine ingredient A in a small saucepan and mix well. Turn on the heat, stirring with a wooden spatula over low heat.

3

Cool the Milk Mixture

When step 1 begins to bubble and thickens, remove from the heat. Add the almond extract, and place the pan over a bowl of cold water, stirring as it cools.

4

Set the Milk Jelly

Once the liquid from step 2 has cooled, pour it evenly into glasses and refrigerate until set.

5

Make the Orange Jelly Mixture

Combine ingredient B in another small saucepan and turn on the heat. Once the sugar has completely dissolved, add the gelatin and stir until fully dissolved.

6

Set the Orange Jelly

Pour step 4 into an enamel tray, let the steam dissipate, then refrigerate until set.

7

Crumble the Orange Jelly

Once the orange jelly has set, break it all up with a spoon. The jelly is fairly soft, so even after setting it remains in a soft state.

8

Layer in Glasses

Place the crumbled jelly from step 6 into the containers from step 3, arranging it as two layers of milk jelly and orange jelly.

9

Garnish

Arrange blueberries and strawberries in the center of the orange jelly, then add a few chervil leaves.
