Fruit Lotus Root Starch Soup
During the National Day holiday, I decided to stay home and prepare one of my childhood favorites for the kids: fruit lotus root soup (水果藕羹). I remember riding the bus into town with my older sister just to enjoy a bowl—it always seemed sweeter and more flavorful at the pedestrian street stall in the city, even though the countryside had its own version. On visits home in recent years, I'd still bring the kids back for a taste.
My cooking has improved since then, and today's smart kitchen appliances make it easier. I'm using a health pot with a double-layer anti-scald design that combines stewing and cooking in one, a non-stick base, and a one-touch mode that prevents boil-overs. Here is how I make the soup—feel free to try it.
