Pan-fry egg-coated cinnamon-raisin English muffins until golden, and serve with sweet, tender caramelized apple slices for a simple, delicious dessert.

Ingredients

lemon juice 2 tsp
unsalted butter (plus a little more for frying muffins) 2 tbsp
light brown sugar 2 tbsp
ground nutmeg 1 tsp
eggs (lightly beaten) 2
milk 4 tbsp

Instructions

Prepare the apples

Cut the apples into quarters, core them, and then slice them thinly. Place the apple slices in a bowl, add the lemon juice, and toss well so the slices are evenly coated.

Sauté the apples

Melt the butter in a skillet, then add the apple slices. Cook over medium-low heat for 3-4 minutes, stirring frequently.

Make the syrup

Add the sugar and ground nutmeg, and continue cooking for 1-2 minutes, until the apples soften and the sauce turns golden and caramelized.

Remove and keep warm

Remove the apples from the heat and transfer them to a bowl. Cover the bowl to keep the apples warm. Set aside while you prepare the muffins.

Prepare the egg mixture

Combine the eggs and milk in a shallow dish and whisk until smooth. Dip the cut sides of the muffins one by one into the egg mixture, coating both sides.

Fry the muffins

Let any excess egg mixture drip off. Melt a small pat of butter in a skillet, swirling to coat the surface evenly. Add two muffin halves at a time and cook for about 2 minutes on each side, until the egg is set and lightly golden.
