fruit & nut slices
Delicious mixed dried fruit and nut snack, an excellent choice for midday snacks.
Ingredients
plain flour
40 g (1.5 oz)
baking powder
a pinch
bicarbonate of soda
a pinch
salt
a pinch
light brown sugar
50 g (2 oz)
chopped pecans
200 g (7 oz)
stoned and chopped dates
225 g (8 oz)
roughly chopped dried apricots
150 g (5 oz)
egg
1
vanilla extract
1 tsp

Prepare the dry ingredients
Preheat the oven to 175°C (350°F/Gas mark 4). Line the base and sides of a 20cm (8 inch) square tin with baking paper. Sift the flour, baking powder, bicarbonate of soda and salt into a bowl. Add the sugar and dried fruit and toss them in the flour

Mix the wet ingredients
In another bowl, whisk the egg and vanilla extract together until pale and thick, then add to the fruit and flour mixture

Mix by hand and slice
Using your hands, mix the mixture until all the dried fruit is evenly coated in batter. Spread the mixture into the tin and bake for 35 to 40 minutes until golden. Lift out using the baking paper and transfer to a chopping board. Cut into slices

Store in an airtight container for five to seven days
