Fried Prawn Segments

Preparing the Prawns
Remove the vein from the back of each prawn, take out the sand sac, trim off the whiskers and legs, wash and cut into segments, then coat with salt and dry starch.
Preparing Ingredients and Sauce
Slice the garlic, and julienne the scallions and ginger. In a bowl, combine the stock, salt, ginger juice, cooking wine, sugar, julienned scallions, sliced garlic, and MSG to make a sauce.
Frying and Stir-Frying
Heat oil in a wok to 50–60% hot, add the prawn segments and fry until crispy, then remove and drain. Leave a little oil in the wok, add the scallions and ginger and stir-fry until fragrant, add the fried prawn segments and stir-fry, pour in the prepared sauce, quickly stir-fry, splash in the vinegar, and serve.
