Step 1
Pour fresh milk, cream, fine granulated sugar, and water into a pot and bring to a boil. Then sift in the cake flour (low-gluten flour) and mix until evenly combined.
Step 2
Continue heating the pot, stirring constantly with a long wooden spoon to evenly combine the fat, water, and flour, until the dough paste separates cleanly from the bottom of the pot. Then turn off the heat and remove the pot from the stove.
Step 3
Add whole eggs in batches, and use a whisk to stir thoroughly and evenly until the batter falls in a smooth triangular ribbon.
Step 4
Pipe round balls onto a baking tray, then bake in the oven at 200°C top heat / 200°C bottom heat for 25 minutes.
Step 5
After cooling, pipe in custard filling and top with fruit to serve.
