A delightful recipe for mint chocolate cookies. While you can easily customize the recipe by swapping in your preferred chocolate, opting for a variety with a higher melting point will yield the best baking results.

Let the softened butter sit at room temperature until soft. Beat in 1 whole egg, then beat with sugar until it turns white. Sift low-protein flour + baking powder, add into (1), and mix until there are no lumps. Cut the mint chocolate into small pieces, add it together with 30g chocolate chips into the batter. Use your hands to pinch out an appropriate amount of dough and flatten it. Preheat the oven. I use a convection oven at 100°C for 20 minutes, then flip and bake for 10 minutes.
