Frying batter (Pâte à frire)
A basic batter for deep frying, suitable for both savory and sweet preparations.
Ingredients
flour (sifted)
225 g
eggs (whole eggs; separate the yolks and beat the whites for a lighter texture)
2
beer
200 ml
salt
1 tsp
Instructions
1
Mixing
Pile the sifted flour into a volcano shape (dig a well in the middle). Add the whole eggs, salt, and beer. Stir with a wooden spoon until the batter is smooth.
2
Resting
Cover with a cloth and let rest for at least 1 hour.
3
Beating egg whites (optional)
To make the batter lighter, you can separate the yolks from the whites, beat the whites to stiff peaks, and fold them into the batter just before use.
