Fry the chicken pieces

Place the chicken pieces into a wok of hot oil. First fry over low heat for about 5 minutes, then increase to high heat and fry for about 3 minutes, until the surface turns golden brown. Remove and drain the oil.

Stir-fry and season

Leave a small amount of oil in the wok and sauté the ginger slices, garlic slices, and chili peppers until fragrant. Add the fried chicken pieces and stir-fry, then add the sesame oil, oyster sauce, cooking wine, doubanjiang, and rock sugar. Simmer over low heat until the sauce becomes thick.
