Ingredients

beef (cut into large chunks) 2500 g
beef offal (heart, tongue, scalp, honeycomb tripe, stomach lining) 2500 g
chili oil 200 g
soy sauce 150 g
fine salt 150 g
ground Sichuan peppercorn 20 g
roasted peanuts (chopped) 150 g
ground sesame 100 g
old braising liquid 2500 g
baijiu (Chinese liquor) 50 g
star anise 10 g
cinnamon 5 g
Sichuan peppercorn 4 g
MSG 5 g

Instructions

1

Braising the meat

Wash the fresh beef and beef offal, and cut the beef into chunks. Place them in a pot, add water, and bring to a rolling boil over high heat. Skim off the foam, drain off the water, then add the old braising liquid, the spice bag (Sichuan peppercorn, cinnamon, star anise), and additional water. Cook until the meat is done but not falling apart, removing pieces as they finish cooking through. Set aside to cool.

Seasoning and assembling

In a bowl, combine the MSG, chili oil, soy sauce, ground Sichuan peppercorn, and a splash of old braising liquid to make a seasoned sauce. Finely chop the roasted peanuts. Slice the cooled beef and beef offal into thin slices, toss them together in a mixing bowl, drizzle with the seasoned sauce and mix well, then sprinkle generously with the chopped peanuts and ground sesame to serve.
