Jar-Braised Pork (Tanzi Rou)

Ingredients

pork hard rib meat (cut into 2 cm cubes) 500 g
soy sauce 15 g
rock sugar 10 g
cinnamon 10 g
scallion segments 5 g
ginger slices 5 g
clear water (enough to cover the meat) to taste

Instructions

1

Cut into Cubes and Blanch

Cut the pork hard rib meat into 2 cm cubes, place into a pot of boiling water to blanch, then rinse clean with fresh water.

2

Jar-Braise the Pork

Place the pork cubes into an earthen jar, add the soy sauce, rock sugar, cinnamon, scallion segments, ginger slices, and enough clear water. Cover the mouth of the jar with a small plate. First bring it to a boil over high heat, then move it to a gentle flame and braise until the broth is thick and the pork is fall-apart tender.
