Poached river perch served with broccoli and garlic sauce
Ingredients
fresh broccoli (cut into spears)
1 pound
water
3⁄4 cup
onion (sliced)
1 small
bay leaf
1
salt
1 teaspoon
dried tarragon
1⁄2 teaspoon
perch fillets
2 pounds
mayonnaise
1 cup
lemon juice
1 tablespoon
garlic clove (minced)
1
ground mustard
1⁄2 teaspoon
salt
1⁄4 teaspoon
pepper
1⁄4 teaspoon
Instructions
1
Prepare the broccoli
Place the broccoli in a steamer. Set it over a saucepan with 1 inch of water; bring to a boil. Cover and steam until crisp-tender; keep warm.
2
Poach the fish
In a large skillet, combine the water, onion, bay leaf, salt, and tarragon; bring to a boil. Reduce heat to low and add the perch fillets in batches. Cover and cook until the fish flakes easily. Using a slotted spoon, remove the fish and onion; keep warm. Discard the bay leaf.
3
Make the sauce and assemble
In a bowl, combine all sauce ingredients. Stir in 2-4 tablespoons of the poaching liquid until the desired consistency is reached. Arrange the broccoli on a platter; top with the fish, onion, and sauce.
