Instructions
Step 1
Break the broccoli into small florets, cut a few slices of carrot for color, soak in light salt water for 15 minutes, then wash. Add water to a pot, along with 1 tbsp of salt and 1/2 tbsp of baking soda—this keeps the blanched broccoli crisp and bright green. Add the broccoli when the water comes to a boil, then scoop it out once it returns to a boil.
Step 2
Smash the garlic with the flat of a knife, then mince.
Step 3
Heat a wok with cold oil; when the oil is slightly warm, add the garlic and stir-fry over low heat until lightly golden and fragrant.
Step 4
Add the broccoli and toss to combine.
Step 5
Squeeze in 2 tbsp of chicken juice, drizzle in 2–3 tbsp of water, and stir-fry until the liquid has evaporated.
Step 6
Light and refreshing, rich in nutrition, and great for a low-fat meal.
Step 7
After too many rich holiday dishes, stir-fry a plate of broccoli to give your stomach a rest.
