Story

This dish combines the meaty texture of King Oyster mushrooms with the delicate crunch of Seafood and Button mushrooms. Simmering them in garlic chili sauce allows the fungi to soak up the spicy, savory flavors, making it an excellent side dish or a light main course over steamed rice.

Ingredients

King Oyster mushrooms 2 large
Seafood mushrooms (Enoki) 100g
Button mushrooms 4-5
Garlic chili sauce 2 tbsp
Cooking oil 1 tbsp
Scallions (optional garnish) 1 stalk

Prep the Mushrooms

Rinse all the mushrooms thoroughly under cold water. Slice the King Oyster mushrooms and button mushrooms into thick, even slices. Cut the seafood mushrooms into manageable segments. Set aside to drain.

Bloom the Sauce

Heat the oil in a wok or deep skillet over medium heat. Once the oil is warm but not smoking, add the garlic chili sauce. Stir-fry gently until the sauce is fragrant and releases its red oil.

Braise the Fungi

Add all the prepared mushrooms to the pan. Toss them well to coat evenly in the spicy sauce. Continue to stir-fry for a few minutes, then add a splash of water and cover the pan. Let the mixture simmer for 3-5 minutes until the mushrooms are tender and have absorbed the flavor.

Serve

Remove the lid and give everything a final stir. Transfer to a serving plate and garnish with chopped scallions if desired. Serve hot with steamed rice.
