Marinate the pork
Place the sliced pork in a bowl. Add light soy sauce, cooking wine, dark soy sauce, salt, and white pepper. Toss until everything is evenly coating the meat. Let it sit for about 10 minutes while you prep the garlic.

Bloom the garlic
Heat oil in a wok or large skillet over medium-high heat until it shimmers. Add the chopped garlic and stir-fry for about 30 seconds until it releases a fragrant aroma and turns lightly golden. Watch closely—garlic burns quickly.

Cook the pork
Add the marinated pork to the wok. Spread the pieces out in a single layer and let them sear for 30 seconds before stirring. Cook for 2-3 minutes, stirring occasionally, until the pork is no longer pink and has absorbed the garlic flavor.

Toss in the green onions and give everything a quick stir to combine. Remove from heat immediately and serve hot over steamed rice.
