One-Pot Cauliflower Stew with Pork

Story

A comforting dish from northern Chinese home cooking, this stew brings together simple ingredients into something greater than the sum of its parts. The cauliflower absorbs all the savory flavors while maintaining a gentle bite.

Ingredients

Pork belly or shoulder, sliced thin 300g
Cauliflower, cut into bite-size florets 1 medium head
Potatoes, peeled and cut into chunks 2 medium
Firm tofu, sliced 200g
Sweet potato starch noodles 50g
Green onions, chopped 3 stalks
Ginger, sliced 3 pieces
Garlic, minced 2 cloves
Light soy sauce 2 tablespoons
Dark soy sauce 1 tablespoon
Salt to taste
Vegetable oil 2 tablespoons
Water or chicken stock 500ml

Instructions

1

Prepare the ingredients

Slice the pork into thin strips. Cut cauliflower into manageable florets. Peel potatoes and cut into large chunks. Slice tofu into rectangles about 1cm thick. Soak the sweet potato noodles in warm water until softened, then drain.

2

Sauté the aromatics

Heat oil in a large pot over medium-high heat. Add ginger and garlic, stir-frying until fragrant, about 30 seconds. Add the pork slices and cook until they lose their pink color and start to brown slightly.

3

Build the stew

Add potatoes and cauliflower to the pot. Pour in soy sauces and water (or stock). Bring to a gentle boil, then reduce heat to medium-low. Cover and let simmer for 15 minutes until vegetables are nearly tender.

4

Add tofu and noodles

Gently place tofu slices and soaked noodles into the stew. Continue cooking covered for another 8-10 minutes until potatoes are fully soft and noodles have absorbed the flavorful broth. Season with salt to taste.

5

Finish and serve

Sprinkle chopped green onions over the top. Give everything a gentle stir to combine. Serve hot in deep bowls, optionally with steamed rice on the side.
