Prepare the ingredients
Slice the pork into thin strips. Cut cauliflower into manageable florets. Peel potatoes and cut into large chunks. Slice tofu into rectangles about 1cm thick. Soak the sweet potato noodles in warm water until softened, then drain.
Sauté the aromatics
Heat oil in a large pot over medium-high heat. Add ginger and garlic, stir-frying until fragrant, about 30 seconds. Add the pork slices and cook until they lose their pink color and start to brown slightly.
Build the stew
Add potatoes and cauliflower to the pot. Pour in soy sauces and water (or stock). Bring to a gentle boil, then reduce heat to medium-low. Cover and let simmer for 15 minutes until vegetables are nearly tender.
Add tofu and noodles
Gently place tofu slices and soaked noodles into the stew. Continue cooking covered for another 8-10 minutes until potatoes are fully soft and noodles have absorbed the flavorful broth. Season with salt to taste.
Finish and serve
Sprinkle chopped green onions over the top. Give everything a gentle stir to combine. Serve hot in deep bowls, optionally with steamed rice on the side.
