Try This If You Don't Like Edamame! Rich, Flavorful Broth That's Perfect Over Rice!

Even if you don't usually like edamame, this recipe will change your mind. The beans turn tender with no grassy, raw taste, and the rich broth makes a perfect topping for steamed rice. I originally discovered this while looking for ways to use up some meatballs, but I ran out before I got a chance to cook it—so I bought fresh ones from the market. The meatballs on their own were a bit too rich for me (I only had one), but paired with the flavorful broth, edamame, and a soft egg, I ended up finishing two bowls of rice. A true rice-killer—definitely worth trying.

Ingredients

salt to taste
tomatoes 2
edamame 1 bowl
meatballs 8
eggs 3
dried shrimp a handful
chopped green onion 1

Instructions

Step 1

Bring a pot of water to a boil and set aside. Cut the tomatoes into chunks, wash the edamame, beat the eggs with salt and set aside. Heat oil in a pan and sauté minced garlic until fragrant, then add the tomatoes. Stir-fry briefly with salt until the tomatoes break down, then add the edamame. Stir-fry until the edamame changes color, add the boiling water, bring to a boil over high heat, then reduce to low and simmer for 5–10 minutes. Meanwhile, scramble the eggs in a separate pan. Add the meatballs and scrambled eggs, sprinkle in a handful of dried shrimp, continue simmering on low for 5 minutes, finally sprinkle with chopped green onion and serve.
