Story

Fresh fava beans are a fleeting spring treat. This quick stir-fry preserves their bright green color and delicate flavor while adding aromatic garlicky punch. Serve alongside rice or as a light lunch.

Ingredients

fresh fava beans in pods 1000g (about 2 cups shelled)
garlic cloves, minced 4
scallions, finely chopped 3
vegetable oil 2 tablespoons
salt to taste
chicken powder or msg a pinch (optional)

Shell and prep the beans

Shell the fava beans from their pods. For larger beans, you can remove the pale inner skin by blanching briefly in boiling water, but this step is optional for tender young beans.

Get the wok ready

Heat oil in a wok or large skillet over medium-high heat until shimmering. Add the minced garlic and chopped scallions, stirring constantly for about 30 seconds until fragrant. Don't let the garlic brown.

Stir-fry the beans

Add the shelled fava beans to the wok. Toss and stir-fry for 2-3 minutes until the beans are bright green and tender-crisp. Season with salt and a tiny pinch of chicken powder if using.
