Ginger Shredded Beef
Sichuan-style Ginger Shredded Beef: tender beef is sliced, marinated with baking soda and seasonings, briefly velveted in hot oil, then stir-fried with ginger shreds in a prepared cornstarch slurry.

Step 1
Julienne the ginger. Slice the beef thinly, then add the baking soda, soy sauce, white pepper, starch, Shaoxing wine, minced ginger, peanut oil, and 100 g of water. Marinate for 1 hour.
Step 2
Heat a wok over high heat. When the oil reaches about 60% hot, add the beef slices and stir-fry. Once the beef turns white, remove and drain off the oil.
Step 3
Leave a little oil in the wok and return it to the heat. Add the scallion and ginger slices, sugar, soy sauce, MSG, and a little water. Once boiling, thicken with the starch slurry, then add the beef and ginger shreds, toss to combine, and plate.
