Ginger Tuiles
Delicate, elegant ginger-flavored tuile cookies, perfect for pairing with creamy desserts or ice cream.

Prepare butter mixture
Place butter and corn syrup in a heatproof container, melt over a bain-marie, and set aside.
Make the dough
In a bowl, mix together sugar, flour, and ground ginger. Stir the dry mixture into the melted butter mixture. Cover with plastic wrap and chill in the refrigerator for 25 minutes.
Prepare the oven
While the dough chills, preheat the oven to 180°C (gas mark 6). Line 2 or 3 baking sheets with parchment paper.
Shape the tuiles
Scoop several teaspoons of dough and roll into small balls in your hands. Place on the prepared baking sheets, leaving enough space between them. Cover with a sheet of parchment paper and roll as thin as possible. Remove the top parchment paper and cut out tuile shapes with a 7.5 or 9 cm round cutter.
Bake
Bake for 5 to 6 minutes until the tuiles are golden brown. Let them sit on the baking sheet for a few seconds to harden, then fold into shape if desired. Let cool completely.
