Ingredients

Butter (melted) 1/3 cup
Light brown sugar 1/3 cup
Sugar 1/3 cup
Molasses 1/2 cup
Eggs (room temperature) 2
Milk 1/2 cup
Sour cream 1 box (8 oz)
All-purpose flour 1-3/4 cup
Baking soda 1 tsp
Salt 1/4 tsp
Ground cinnamon (plus extra for garnish) 2 tsp
Ground nutmeg 1/4 tsp
Ground ginger 1 tsp
Ground cloves 1/4 tsp
Cream cheese (room temperature) 1 package (8 oz)
Butter (softened) 1/2 cup
Vanilla extract 1 tsp
Powdered sugar 1 box (16 oz)

Instructions

1

Make the batter

Preheat the oven to 350°F. Combine the melted butter, sugar, brown sugar, molasses, eggs, milk, and sour cream. In another bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Gradually add the dry ingredients to the wet ingredients and mix until smooth.

2

Bake

Pour the batter into a greased jelly roll pan and bake for 20 minutes. After it cools slightly, use the open end of a push-pop mold to cut out rounds.

3

Make the cream cheese frosting

Using an electric mixer, beat the cream cheese, butter, and vanilla extract until smooth. Add the powdered sugar 1 cup at a time, beating continuously until well blended and smooth.

4

Assemble

Place one gingerbread round at the bottom of a push-pop mold and pipe a ring of cream cheese frosting on top. Add another gingerbread round and finish with a final ring of frosting. Dust a pinch of cinnamon over the top for garnish.
