Wet starch (for coating) 150 g
Sesame oil 5 g
Vegetable oil 1000 g
Fine salt (1 g for marinating prawns, 1.5 g for seasoning) to taste
Rice vinegar to taste

Instructions

1

Prepare the goji berries

Rinse the goji berries. Boil 15 g of them in water to extract 15 g of concentrate. Steam the remaining 15 g in a small bowl and set aside.

2

Marinate the prawns

Wash the prawns and cut them evenly into three sections. Lightly marinate with 1 g fine salt and 15 g cooking wine, then coat evenly with wet starch.

3

Mix the sauce

Cut the scallion and ginger into strips and slice the garlic. Combine them in a bowl with sugar, 1.5 g fine salt, 10 g soy sauce, 10 g cooking wine, and the goji berry concentrate to make a sauce.

4

Fry the prawns

Place a wok over heat, add vegetable oil and heat until hot. Add the prawn sections and scallion segments and fry until the outside turns golden. Pour off the oil through a strainer.

5

Finish the dish

Return the wok with a little oil left to the heat. Add the fried prawns, pour in the prepared sauce along with the steamed goji berries, toss a few times, then drizzle with sesame oil and rice vinegar to finish.
