Ingredients
Instructions
Mix wet and dry ingredients
Mix milk and salad oil until well combined. Sift in the mixed cake flour and cocoa powder, stir lightly just until no dry flour remains.
Add egg yolks
Add the egg yolks one at a time, stirring thoroughly after each addition before adding the next.
Whip egg whites
Place egg whites in a clean, dry, oil-free bowl. Whip on low speed until coarse bubbles form, add a few drops of white vinegar, then continue whipping until the foam becomes fine. Add 20g of sugar in three batches, whip until soft peaks form (the beater head has small downward-curving hooks).
Combine batter
Add the whipped egg whites to the egg yolk mixture in three batches, folding gently and quickly until the egg whites and yolk mixture are fully combined.
Bake cake layer
Line a baking tray with parchment paper, pour in the batter, smooth the surface, and tap the tray to release air bubbles. Preheat the oven to 175°C and bake for 20 minutes. Test with a bamboo skewer: if it comes out clean with no batter sticking, the cake is done. Remove from the oven, peel off the parchment paper, and invert to cool completely.
Make chocolate cheese mixture
Soften the cream cheese at room temperature, add 20g of sugar and stir until smooth, then mix in 20g of chocolate sauce until well combined.
Roll and set shape
Spread the cheese mixture evenly over the surface of the cooled cake layer, roll it up tightly, wrap in parchment paper, and let set for about 1 hour.
Assemble and shape
Remove the parchment paper, cut a small piece off the cake roll, and assemble as shown in the figure.
Apply decoration
Spread the remaining chocolate sauce over the surface of the cake roll, make it as rough as possible to look more like a tree trunk.
