Gold Medals
Gold medal cookies perfect for children's parties, decorated with icing messages and colorful sprinkles, and designed to be tied with a ribbon for wearing.
Ingredients
butter (diced)

extra-fine caster sugar

egg

cake flour

baking soda
2 pinches
egg white (for icing)

icing sugar (for icing)

multicolored candy pieces (for decoration)

thin ribbon

Instructions

Step 1
Preheat the oven to 180°C (th. 6). Lightly grease 2 baking sheets.

In a bowl, cream the butter and sugar. Add the egg. Add the flour and baking soda, and mix thoroughly.

Drop large spoonfuls of batter onto the baking sheets, leaving plenty of space between them for the cookies to spread. Bake for about 15 minutes, until the cookies start to spread and turn golden. Transfer to a wire rack to cool.

Use a toothpick to poke a large hole 1 cm from the edge of each cookie.

Make the icing: Whisk the egg white with a wooden spoon. Gradually add the icing sugar, stirring until a thick paste forms. Pour the icing into a small plastic bag and snip off the tip.

Use the icing to write a message in the center of each cookie. Use a little icing to attach a ring of multicolored candy pieces around the message, then let set until firm.

Once the icing is hard, carefully thread a thin ribbon through the hole in each gold medal cookie.
