Lean ham (trimmed, sliced into round coin shapes) 125 g
Rose wine 20 g
Sesame oil a pinch
Fine salt 4 g
Egg white 1
Oyster sauce 4 g
Pork fat (sliced into round coin shapes) 175 g

Instructions

1

Ingredient Prep and Marination

Peel the shrimp, trim the ham, and slice both into round coin shapes. Slice the pork fat into round coin shapes as well. Combine the rose wine, sugar, fine salt, MSG, and oyster sauce, and marinate the pork fat in this mixture for 10 minutes before removing.

Coating and Pan-frying

Coat the shrimp in a batter made with white pepper, sesame oil, water chestnut starch, MSG, and egg white. Then stack 1 piece each of pork fat, shrimp, and ham into 3 layers, with the pork fat on the bottom, the ham on top, and the shrimp in the middle. Heat cooking oil in a wok over high heat, add the stacks, then reduce to low heat and pan-fry for 5 minutes until done.
