Ingredients

boneless chicken breast 300g
duck egg yolks (or chicken egg yolks) 4 yolks
five-spice powder 1/2 teaspoon
light soy sauce 1 tablespoon
shaoxing wine 1 teaspoon
ginger, grated 1 small piece
cornstarch 1 tablespoon
sesame oil 1/2 teaspoon
salt to taste
vegetable oil for greasing

Prep the chicken

Grind the chicken breast into a fine paste using a food processor. Transfer to a bowl and add soy sauce, shaoxing wine, grated ginger, five-spice powder, cornstarch, and sesame oil. Mix vigorously in one direction for 2-3 minutes until the mixture becomes sticky and cohesive.

Prepare the yolks

If using duck eggs, carefully separate the yolks from the whites. Rinse the yolks gently and pat dry. If your yolks are particularly salty, skip adding extra salt to the chicken mixture.

Shape and wrap

Take about 2 tablespoons of chicken paste and flatten it into a small disc in your palm. Place one yolk in the center, then carefully fold the edges around to completely enclose the yolk. Roll gently between your palms to form a smooth, round bundle. Repeat with remaining ingredients.

Steam until done

Lightly grease a steaming plate or basket. Arrange the bundles with space between each one. Steam over boiling water for 12-15 minutes until the chicken is cooked through and firm to the touch. The interior yolk should remain slightly流动的 for that creamy effect.
