Pork and Zucchini Dumplings
Same dumpling wrapper, endlessly changing fillings. There's nothing better than dumplings—and that's all thanks to their versatile fillings. This pork and zucchini dumpling is as delicious as ever.

Step 1
Add water to the wheat flour to form a dough, and let it rest for 20 minutes.
Step 2
Peel and seed the zucchini, wash it clean, then grate it into shreds and add a pinch of salt to draw out the moisture.
Step 3
To the pork filling, add oil, salt, light soy sauce, dark soy sauce, sugar, cooking wine, white pepper, scallions, and ginger, and stir in one direction until the filling becomes sticky and cohesive.
Step 4
Squeeze out the excess moisture from the zucchini and fold it into the seasoned pork, then add more salt and sesame oil and stir evenly to make the dumpling filling.
Step 5
Divide the rested dough into medium-sized pieces.
Step 6
Roll each piece out into a round dumpling wrapper and place a portion of filling on top.
Step 7
Pinch the edges of the wrapper together firmly to seal each dumpling.
Step 8
Bring a pot of water to a boil, add the dumplings, and cook until done, then remove and serve.
