Ingredients

duck feet (boned, with the hard callus on the palm trimmed off) to taste
minced chicken to taste
egg white (beaten into foam) to taste
green and red bell peppers (cut into diamond-shaped slices) to taste
peas to taste
fine salt to taste
scallion to taste
ginger to taste
cooking wine to taste
cornstarch to taste
chicken broth to taste
rendered chicken fat to taste

Instructions

1

Step 1

Boil the duck feet until about half-done. Remove the bones, trim away the hard callus on the palm, place them in a plate with the palm facing up, and sprinkle with dry cornstarch.

2

Step 2

Beat the egg whites with chopsticks until foamy; cut the green and red bell peppers into diamond-shaped slices.

3

Step 3

Combine the minced chicken with fine salt, cooking wine, scallion-ginger juice, and the beaten egg white foam. Stir vigorously until the mixture becomes a sticky paste. Pipe or shape the paste into a goldfish form and place each on a duck foot. Press a pea into either side of the fish's head to serve as the eyes, then arrange the pepper slices along the body to complete the raw goldfish duck feet assembly.

Step 4

Steam the assembled goldfish duck feet until fully cooked, then transfer them to a serving plate. Season the original cooking liquid with fine salt, thicken it with a cornstarch slurry, and pour it over the goldfish duck feet before serving.
