Grain Bread
Wheat, oats, barley, and corn give this nutritious grain bread its rich, robust flavor.
Ingredients
quick-cooking rolled oats
1/3 cup (1 1/2-lb) / 1/2 cup (2-lb)
quick-cooking barley
1/3 cup (1 1/2-lb) / 1/2 cup (2-lb)
water
1 1/4 cups (1 1/2-lb) / 1 2/3 cups (2-lb)
margarine or butter, cut up, or cooking oil
2 tablespoons (1 1/2-lb) / 3 tablespoons (2-lb)
bread flour
1 1/2 cups (1 1/2-lb) / 1 2/3 cups (2-lb)
whole wheat flour
3/4 cup (1 1/2-lb) / 1 cup (2-lb)
cornmeal
1/3 cup (1 1/2-lb) / 1/2 cup (2-lb)
gluten flour
1 tablespoon (1 1/2-lb) / 4 teaspoons (2-lb)
sugar
1 tablespoon (1 1/2-lb) / 2 tablespoons (2-lb)
salt
3/4 teaspoon (1 1/2-lb) / 1 teaspoon (2-lb)
active dry yeast or bread machine yeast
1 1/4 teaspoons (1 1/2-lb) / 1 1/2 teaspoons (2-lb)

Choose the bread weight. Spread the rolled oats and barley in a shallow baking pan. Place in a 350°F oven and bake for about 15 minutes, stirring occasionally, until lightly browned. Cool.

Place the toasted oats and barley into the blender container. Cover and blend until floury. Add the mixture and the remaining ingredients to the bread machine according to the manufacturer's instructions. If a whole wheat cycle is available, select the whole wheat cycle; otherwise, choose the basic white bread cycle.
