Walnut and Red Date Rice Cake
A traditional sweet cake made with rice, walnuts, jujubes (red dates), and sugar, featuring a delicate texture and fragrant sweetness.

Rice (washed)

White sugar
300 g
Small red dates (peeled and pitted)
100 g
Walnut kernels (soaked in hot water, peeled, and chopped)
Water (used in two parts: 500 ml for grinding, 500 g for dilution)

Grinding into a paste
Soak the walnut kernels in hot water, peel them, and chop them finely; peel and pit the small red dates, wash the rice, then grind them together with 500 ml of water into a paste — the finer, the better.

Filtering
Add another 500 g of water to the ground paste, pass it through a fine sieve to remove the residue, and pour the liquid into a pot.

Cooking
Bring to a boil over high heat, add the white sugar, return to a boil, and skim off the foam.

Portioning
Divide evenly into 12 small bowls and serve.
