Grand Braised Shredded Tofu (Da Zhu Gan Si)

Ingredients

Pressed tofu (sliced into thin sheets, then julienned) 100g
Cooked shredded chicken 50g
Shrimp (stir-fried until milky white, set aside) 20g
Cooked chicken gizzards 20g
Cooked chicken liver 20g
Cooked ham (julienned) 15g
Winter bamboo shoots 25g
Pea shoots 15g
Dried shrimp roe 5g
Rendered pork fat (lard) 25g
Soy sauce 15g
Salt 10g
Chicken broth 200g

Instructions

1

Prepare the shredded tofu

Slice the pressed tofu into thin sheets, then cut it into fine shreds. Plunge the shreds into boiling water to blanch, drain, then blanch two more times in fresh boiling water and drain again.

2

Stir-fry the shrimp

Place the wok over the heat, add the rendered pork fat, and stir-fry the shrimp until they turn milky white. Transfer to a bowl and set aside.

3

Braise the shredded tofu

Pour the chicken broth into the pot and add the shredded tofu. Place the chicken shreds, gizzards, liver, and bamboo shoots along one side of the pot, then add the dried shrimp roe and the remaining rendered pork fat. Bring to a rolling boil and cook for 15 minutes. Once the broth has thickened and become rich, add the soy sauce and salt. Cover and simmer for another 5 minutes, then remove from the heat. Spoon the shredded tofu into a shallow serving dish, arrange the gizzards, liver, bamboo shoots, and pea shoots around the edge, drape the ham shreds over the top, and finish with the reserved shrimp before serving.
