Green Pepper Tenderloin

Ingredients

green pepper to taste
beef tenderloin (substitute pork tenderloin if overseas) to taste
ginger to taste
garlic to taste
Sichuan peppercorn (cumin may be used if omitted) to taste
fermented black beans to taste
shiitake mushroom (fresh shiitake) to taste
salt to taste

Instructions

Stir-Fry the Green Peppers

First stir-fry the green peppers, then remove from the wok when they are about 80% cooked.

Stir-Fry the Meat

Rinse the wok, add oil, and stir-fry the beef tenderloin. Add ginger, garlic, Sichuan peppercorn, and fermented black beans.

Combine and Stir-Fry

Add the shiitake mushrooms, turn to the highest heat and stir-fry. Season with salt, add the green peppers, stir-fry once more, then plate and serve.
