Winter Bamboo Shoot and Snow Lotus Chicken Soup

Ingredients

Codonopsis root (washed, cut into 1 cm sections) 15 g
Snow lotus (washed, cut into 1 cm sections) 10 g
Ginseng (sliced thinly, packed in a gauze bag, tied tightly) 6 g
Job's tears (rinsed clean with water) 30 g
Winter bamboo shoots (washed, cut into 4 cm sections) 50 g
Chicken (washed, feathers and innards removed) 200 g
Ginger (washed and sliced) to taste
Scallions (washed and sliced) to taste
Cooking wine to taste
Salt to taste
MSG to taste
Ground white pepper to taste

Preparation

Measure out the codonopsis root, snow lotus, and job's tears according to the specified amounts. Wash the three Chinese herbs, then cut the codonopsis root and snow lotus into 1 cm sections; slice the ginseng thinly, pack it in a gauze bag, and tie it tightly. Rinse the job's tears clean with water. Wash the winter bamboo shoots and cut them into 4 cm sections. Set everything aside.

Simmering

Wash the chicken, removing any feathers and innards, and place it in a stewing pot. Add the herb sachet, winter bamboo shoots, ginger, scallions, cooking wine, and an appropriate amount of water. Bring to a boil over high heat, then reduce to low heat and simmer for 50 minutes.

Seasoning

Add salt, MSG, and ground white pepper, stir well to combine, and serve.
