Ingredients

Beef rump tip (or shank meat, washed, trimmed of fascia, frozen in refrigerator) 1000 g
Minced ginger 1 g
Minced green onion 15 g
Mashed garlic 1 g
Sugar 15 g
Ground black pepper 1 g
Roasted sesame powder (roasted) 3 g
Pickling juice (preparation method attached later, not provided here) to taste
Soy sauce (for marinating) to taste
Water (for preparing marinade) to taste
Mushrooms 100 g
Green pepper 100 g
Onion 100 g
Carrot 100 g

Instructions

1

Freezing

Wash the beef rump tip, trim away all fascia, and place it in the refrigerator to freeze.

2

Cutting

Remove the beef rump tip from the refrigerator, cut it into large thin slices, gently pound flat with the back of a knife, then cut into medium-sized squares.

3

Marinating

In a porcelain bowl, combine soy sauce, water, minced green onion, mashed garlic, minced ginger, sugar, ground black pepper, and roasted sesame powder. Mix well, then add the beef and marinate for 4 hours; if marinating in the refrigerator, allow a longer time.

4

Grilling

There are several tools for grilling beef: an iron rack where meat slices can be placed on top, or iron skewers to thread the meat. While grilling, you can add mushrooms, green pepper, onion, carrot, or other ingredients between the meat slices.

5

Serving

Place the marinated beef slices over charcoal fire until cooked through, then portion the pickling juice into individual small bowls for dipping.
