Grilled Beef Ribs

Ingredients

Beef ribs (with meat on bone, cut into 5 cm pieces, scored in a cross pattern bone-side down) 2000 g
Soy sauce 125 g
Water 125 ml
Chopped scallion 28 g
Garlic paste 5 g
Minced ginger 5 g
Sugar 30 g
Ground black pepper 2.5 g
Toasted sesame powder 6 g

Instructions

1

Cut and Marinate

Cut the beef ribs (with meat on the bone) into 5 cm long small pieces. With the bone-side down, use a sharp knife to score a square cross-hatch pattern into the meat so the marinade can seep in. Place all the seasonings in a large ceramic bowl, add the ribs, and toss until evenly coated. Cover and refrigerate for 8 hours.

2

Grill Over Open Flame

Place the ribs on a grill with the bone-side down and grill until golden brown, then flip to the other side and continue grilling until fully cooked. Turn frequently during grilling so every side cooks through evenly, becoming fragrant and crispy. The ribs can be eaten by hand.

3

Oven Method

Oven baking also works well. Place only a single layer of ribs on each tray and bake at medium heat for 1 hour, flipping once halfway through.
