Hearty Beef and Vegetable Soup

This Chinese-style hearty beef and vegetable soup is packed with a variety of ingredients. You can optionally add tomatoes to thicken the broth to your preference.

Hearty Beef and Vegetable Soup

Ingredients

beef shanks or soup bones (or a combo of bones and stew beef) 2 pounds
water 4 quarts
garlic (smashed) 4 cloves
tomatoes (cut into eighths (1½ cups)) 2 medium
carrots (peeled and cut into 1-inch-thick rounds (1 cup)) 2 medium
potato (peeled and cut into 1-inch cubes (2 cups)) 1 large
yellow onion (cut into eighths and separated) 1 large
daikon radish (peeled and cut into 1-inch-thick rounds (1½ cups)) 1 small
soy sauce 2 tablespoons
salt 1 tablespoon
freshly ground white or black pepper ½ teaspoon
celery (cut into ½-inch-thick slices (1 cup)) 2 stalks
cabbage (cored and cut into 1½-inch squares (2 cups)) ¼ head small
green onions (Chopped, for garnish)
cilantro (Chopped, for garnish)

Instructions

Prepare beef

Rinse the beef shanks with cold water to remove any blood.

Make broth

Place the bones and water in a large pot and bring to a boil over high heat. Skim off the foam. Add the garlic, reduce to medium heat, cover, and simmer on low heat for 2.5 to 3 hours until the meat becomes tender. Remove the bones, strip off the meat, and discard the bones.

Cook vegetables

Return the meat to the broth. Add the tomatoes, carrots, potatoes, onions, and daikon radish. Cover and simmer for 30 minutes until the vegetables are just cooked through. Season with soy sauce, salt, and pepper. Add the celery and cabbage, and cook for another 2-3 minutes until softened but still crisp-tender.

Serve

Serve immediately in soup bowls, or ladle over rice for a complete meal. Garnish with green onions and cilantro.
