green beans 300g
potatoes 2 medium, cubed
pork belly 200g, sliced
green onions 2 stalks, cut into sections
ginger 3 slices
soy sauce 3 tablespoons
vegetable oil 2 tablespoons
salt to taste

Prep your ingredients

Trim the green beans and break them into bite-sized pieces. Peel and cube the potatoes into roughly 1-inch pieces. Slice the pork belly into thin strips. Gather the green onions and ginger.

Bloom aromatics and brown the pork

Heat oil in a large pot or Dutch oven over medium heat. Add the green onions and ginger, stir until fragrant, about 30 seconds. Add the pork belly and cook until lightly browned and aromatic, about 3-4 minutes.

Add vegetables and sauce

Toss in the green beans and potatoes, stirring to combine with the pork. Pour in the soy sauce and give everything a good mix so the vegetables are evenly coated.

Simmer until tender

Add water to just cover the ingredients, about 1-2 cups. Bring to a gentle boil, then reduce heat to low and simmer covered for 20-25 minutes until potatoes and beans are fork-tender. Season with salt to taste.
