A medicinal snack for nourishing the kidneys and replenishing essence, made by simmering black beans with several Chinese herbs until the liquid evaporates, followed by sun-drying.

Herbal Black Soy Beans

Ingredients

black soy beans (soaked in warm water for 30 minutes) 500 g
cornus fruit (shan zhu yu) 10 g
poria (fu ling) 10 g
Chinese angelica root (dang gui) 10 g
mulberry (sang shen) 10 g
cooked rehmannia root (shu di huang) 10 g
psoralea fruit (bu gu zhi) 10 g
cuscuta seed (tu si zi) 10 g
eclipta (han lian cao) 10 g
schisandra fruit (wu wei zi) 10 g
goji berries (gou qi zi) 10 g
lycium bark (di gu pi) 10 g
black sesame seeds 10 g
salt to taste

Instructions

Soak the black beans

Soak the black beans in warm water for 30 minutes and set aside.

Decoct the herbal liquid

Place the herbs into a cheesecloth bag, tie it tightly, and put it into a pot. Add an appropriate amount of water and simmer. Every 30 minutes, remove the decoction once, then add more water and simmer again. Continue until four batches have been removed, and pour all of them into one pot.

Simmer the black beans

Add the black beans to the pot of herbal liquid and stir in salt. Bring to a boil over high heat, then reduce to low heat and simmer until the liquid has fully evaporated. Remove from heat.

Dry and store

Sun-dry the black beans until completely dry, then transfer them into a jar for storage.
