all-purpose flour 500g
salt 5g
boiling water 450g
cooking oil 50g

Instructions

Step 1

Weigh 500g of all-purpose flour into the mixing bowl, add 5g of salt, and pour in 450g of boiling water

Immediately stir with chopsticks to form dough flakes

Let it cool down slightly, then knead by hand into a smooth dough. Because it is boiling water, even though the water-to-flour ratio reaches 0.9:1, the flour still has strong water absorption, so it can form a dough rather than a thin batter

Divide into 60g dough portions, round them, lightly coat the surface with a thin layer of oil, cover with plastic wrap, and let rest for 15 minutes

Take two dough portions and flatten them with the heel of your palm

Stack the two dough pieces together, and spread a layer of oil on the contact surfaces (you can also apply a thin layer of oil paste—50g oil mixed with 30g flour into a runny paste) to make it easier to peel them apart after cooking
