Satay Beef

This uniquely flavored Cantonese dish features beef stir-fried with Chaoshan sha cha sauce, served over a bed of sautéed mung bean sprouts.

Ingredients

Beef (sliced against the grain) 160g
Bean sprouts 160g
Ginger (julienned) 2 slices
Scallion whites 2 stalks
Chaozhou satay sauce 1 tbsp
Oil 3 tbsp
White pepper A pinch
Sesame oil A pinch
Water (slurry) 3 spoons
Sugar (slurry) 1 tsp
Cornstarch (slurry) 1 tsp
Dark soy sauce (slurry) 1 tsp

Instructions

Step 1

Slice the beef against the grain, mix with the marinade, marinate for 30 minutes, blanch in oil, and set aside.

Stir-fry the bean sprouts in a dry wok until cooked, add a pinch of salt and oil, toss well, and arrange on a plate.

Heat the oil, sauté the satay sauce, ginger, and scallion whites until fragrant, add the beef and slurry, stir-fry until well combined, and serve over the bean sprouts.
