Ingredients

Tofu (cut into thick slices) 300 g
Pork belly (sliced) 125 g
Wood ear mushrooms (rehydrated in warm water) 5 g
Green onions (cut into segments) 2
Cornstarch (for thickening) 1 tbsp
Cooking oil 30 g
Soy sauce 1 tbsp
Cooking wine 2 tbsp
Chili bean paste (finely chopped) 1 tbsp
Salt 1 tsp
MSG 1 tsp

Instructions

1

Prepare the Ingredients

Cut the tofu into thick slices, slice the pork belly, cut the green onions into segments, rehydrate the wood ear mushrooms with warm water, and finely chop the chili bean paste.

2

Pan-Fry the Tofu

Heat oil in a wok, add the tofu slices, and pan-fry until golden on both sides.

3

Braise

Leave a little oil in the wok, stir-fry the pork slices until fragrant, add the chopped chili bean paste and stir-fry until the oil turns red. Season with soy sauce, cooking wine, and water, then add the tofu, wood ear mushrooms, salt, and MSG.

4

Thicken the Sauce

Once it boils, reduce to low heat and braise the tofu through. Add the green onion segments, thicken with the cornstarch slurry, and reduce the sauce until concentrated.
