Homemade Honey Pomelo Tea

Autumn pomelo is delicious and juicy, so don’t miss it! The whole fruit can be used: eat the flesh, dry and store the peel for use as a seasoning in meat stews, prepare the white pith for cooking, or turn it into candied fruit. Today, I’m making a jar of pomelo tea for my family with red-fleshed pomelo peel. Once prepared, mix it with warm water and enjoy its inviting aroma.

Homemade Honey Pomelo Tea

Ingredients

red pomelo 1
white sugar to taste
honey to taste
lemon juice a pinch

Instructions

1

Step 1

Use 1 pomelo.

2

Step 2

Add salt and wash the surface thoroughly several times.

3

Step 3

Peel off the outer rind, remove the white pith, and keep only the yellow zest.

4

Step 4

Cut the zest into thin shreds.

5

Step 5

Toss the zest with a pinch of salt and let it marinate briefly.

6

Step 6

After marinating for 30 minutes, soak the zest in clean water for 30 minutes to remove its bitterness.

7

Step 7

Place the zest in a pot of cold water.

8

Step 8

Bring the water to a boil, turn off the heat, then remove the zest and drain it well.

9

Step 9

Return the zest to a bowl.

10

Step 10

Cover with cold water again, add a pinch of salt, and soak for another 30 minutes. Then bring it to a boil once more to remove the bitterness, repeating the process from Step 6 through this step.

11

Step 11

Pour enough water into a pot and add white sugar to taste.

12

Step 12

Remove the membranes from the pomelo flesh, break it into pieces, and add it to the sugar water.

13

Step 13

Add the zest and simmer gently over low heat, stirring constantly.

14

Step 14

The pomelo will release a lot of liquid as it cooks. Keep the heat at the lowest setting and continue stirring and cooking slowly. Taste as you go and add more sugar until the sweetness is to your liking.

15

Step 15

After about 45 minutes, the pomelo jam will be thick enough that it no longer falls easily from the spoon. Add 2 coffee spoons of lemon juice, stir until evenly combined, and turn off the heat.

16

Step 16

Let the pomelo jam cool, then add enough honey to just cover it.

17

Step 17

Transfer the jam to a container, gently stir it, smooth the surface, cover the container, and refrigerate.

18

Step 18

Spoon out some of the pomelo tea and dilute it with warm water.

19

Step 19

The pomelo tea has a fresh, fragrant aroma and is invigorating. Enjoy a cup to start the day.
