Story

A beloved classic from Korean home cooking, homemade tteok offers the soft, chewy texture that defines so many iconic Korean dishes. Made from scratch with simple ingredients, these rice cakes can be enjoyed on their own as a comforting snack or used as the foundation for dishes like tteokbokki and tteokguk. Crafting them at home brings an authentic, freshly-made quality that store-bought versions simply cannot match.

Ingredients

glutinous rice flour 550g
rice flour 450g
warm water 500g
warm water 200g
vegetable oil 40g

Instructions

Step 1

Mix glutinous rice flour with 500g of warm water and knead into a dough. Then take 250g of the dough and shape it into a flat disc. Drop it into boiling water and boil until it floats. Return the cooked dough back into the mixture and knead briefly once more — be careful as it is hot.

Add the rice flour and 200g of warm water into the mixture from step (1). Knead until it is no longer sticky to your hands. Set aside.

Take a portion of the glutinous rice dough and roll it into a long strip about 20 cm long. Then use a knife to quickly cut it down from the middle.

Pour 1 cup of water into the outer pot of the electric rice cooker. Line the steaming tray with steamer paper or baking paper, then place the rice cake strips on it. Cover with the lid, and as soon as the switch pops up, immediately remove.

Once cooled, it can be stored in the refrigerator for chilled storage.
