Homemade Large Blanched Dried Tofu Shreds

Shredded pressed tofu is repeatedly washed and blanched to remove any raw odor, then simmered in a broth prepared with dried shrimp.

Homemade Large Blanched Dried Tofu Shreds

Ingredients

Dried tofu (shredded) to taste
Dried shrimp (rehydrated) to taste
Scallion (washed and cut into large segments) to taste
Soy sauce to taste
White sugar (slightly more than usual) to taste
Cooking wine to taste
Chicken bouillon to taste
Sesame oil (drizzled in) to taste

Instructions

Step 1

Shred the dried tofu, and place the shredded tofu into a water-filled basin immediately after shredding to prevent sticking. Rinse the shredded tofu several times, then blanch in boiling water. Remove and soak in a water-filled basin for later use.

Soak the dried shrimp until fully rehydrated, wash the scallion and cut it into large segments.

Heat oil in a pan, add the dried shrimp and scallion segments, and stir-fry over medium heat until the scallion turns golden brown. Add cooking wine, soy sauce and a little extra white sugar to the pan, then add water and boil for 5 minutes. Remove the scallion and dried shrimp and set aside.

Add the blanched dried tofu shreds to the pan, stir gently to mix evenly, cook for 5 minutes, then turn off the heat, drizzle in sesame oil, mix well and serve.
