Pan-Fried Dog Tenderloin

Korean dish: tender dog loin is battered, pan-fried until golden, then tossed in sauce for a finish that is aromatic, spicy, juicy, and tender.

Marinate the dog tenderloin
Place the dog tenderloin in a porcelain bowl and soak for 2 hours. Remove and drain. Use a knife to trim away all sinews and form 3 cm diameter patties. Place in a porcelain bowl and add the minced scallion, Shaoxing wine, salt, spicy soy sauce, chili oil, white pepper, and sesame oil. Mix well and marinate for 5 minutes.
Prepare the egg mixture
Crack the egg into a porcelain bowl, add 50 ml of water, and whisk until well combined.
Pan-fry the dog tenderloin
Heat a wok over high heat, add the rapeseed oil, and heat through. Remove the wok from the heat. First coat the dog tenderloin in dried starch, then dip in the egg mixture, and place in the wok to pan-fry. Return to the heat and cook over low heat until both sides are golden brown. Remove and drain off excess oil.
Add sauce and plate
In the same wok, add the sesame oil and garlic paste. Stir-fry until fragrant, then pour in the Shaoxing wine, spicy soy sauce, chili oil, sugar, salt, and MSG. Flip and toss the dog tenderloin in the sauce for 2 minutes, then transfer to a serving plate.
