Prep the vegetables
Dice the tomatoes into small, uniform pieces about half an inch thick. Finely chop the onion—you want it to melt into the sauce, so the smaller the pieces, the better. Mince the garlic and have everything ready by the stove.
Bloom the aromatics
Melt the butter in a medium saucepan over medium heat. Once it foams, add the onion and garlic. Cook, stirring frequently, until the onion turns translucent and the garlic becomes fragrant—about 2 minutes. Don't let the garlic burn.
Simmer the sauce
Add the diced tomatoes to the pan. Reduce heat to medium-low and let everything simmer gently. Stir occasionally, breaking up the tomatoes with a wooden spoon. Cook until the sauce thickens and the tomatoes break down completely, about 15 minutes.
Season and finish
Stir in the oregano, basil, salt, pepper, and red pepper flakes if using. Taste and adjust seasoning. For a smoother sauce, blend briefly with an immersion blender. Let cool slightly before using on pizza.
