Homemade Tomato Sauce
A thick, smooth sauce made from blanched tomatoes blended with tomato paste, ketchup, sherry vinegar, and a dash of Tabasco.

This vibrant sauce balances the sweetness of fresh tomatoes with the tang of sherry vinegar and a hint of heat from Tabasco. After blending and emulsifying with olive oil, it is passed through a sieve multiple times to achieve an exceptionally smooth, refined texture.
Ingredients
Tomatoes (blanched, peeled, and seeded)

Tomato paste

Tomato ketchup

Sherry vinegar

Spicy soy sauce (Tabasco)

Instructions

Process tomatoes
Blanch the tomatoes in hot water then immerse in cold water, peel and remove seeds, and coarsely chop the flesh

Blend
Place the flesh into a food processor and blend

Season
Add tomato paste, tomato ketchup, sherry vinegar, and a few drops of Tabasco, add salt

Add oil
Add olive oil and mix quickly with a hand blender

Strain
Sieve multiple times to season
