This dish is extremely flexible — you can use whatever ingredients you have in your fridge, from greens and ham to eggs and any other ingredients, and make it in whatever style you want. It combines both vegetables and a staple food, tastes delicious, is quick and convenient, and is perfect for busy office workers. Most people cook noodles in water when making stir-fried noodles at home, but I personally believe that for the best taste, you should not boil noodles in water, but steam them in a steamer. Steamed noodles have just the right moisture and texture, and after stir-frying they turn out extra chewy and springy, every strand glistens with oil, has a rich aroma when you bite into it, stays soft without turning mushy, and tastes absolutely delicious.

250g of noodles

Celery, carrot, lean pork, onion

Cut the onion and pork into thin shreds

Cut the celery into segments, shred the carrot

Place the noodles in a steamer. Once steam is fully released, steam over high heat for 10 minutes, flipping the noodles once halfway through with chopsticks to ensure even heating. Be careful to avoid burns from the hot steam, then let the steamed noodles rest covered for 5 minutes.

Use chopsticks to fluff the steamed noodles, then drizzle with sesame oil to prevent the noodles from sticking together.

Add oil to the pan, using slightly more than usual, then stir-fry the pork shreds until fragrant.

Once the pork shreds are fragrant, add the onion and stir-fry until aromatic.

Stir-fry the onion until fragrant, then add celery and carrots and continue stir-frying.

Next, add the steamed noodles to the pan and stir-fry. If the pan is too dry and prone to scorching, you can add a small amount of hot water as needed.
