Honey Glazed Char Siu
Tender pork shoulder strips bathed in a sweet, sticky glaze with deep Chinese BBQ flavors. This Cantonese favorite caramelizes beautifully on the outside while staying succulent within.
Story
Char siu is a beloved street food throughout Guangdong and Hong Kong. The name literally means 'fork roasted' — a nod to the traditional cooking method where meat was skewered on forks and roasted over open flame. These days, oven roasting achieves wonderful results with less fuss.

Prepare the pork
Trim any excess fat from the pork shoulder, then cut the meat into long strips roughly 5cm thick. Make shallow cuts across the surface to help the marinade soak in deeper.
Mix the marinade
In a bowl, whisk together the char siu sauce, dark soy sauce, honey, shaoxing wine, minced garlic, and five spice powder until the honey fully dissolves and everything is combined.
Marinate the meat
Add the pork strips to the marinade and turn them until fully coated. Cover and refrigerate for at least 2 hours, preferably overnight. Give the container a gentle shake every so often to redistribute the sauce.
Roast until caramelized
Preheat your oven to 200°C (400°F). Line a baking tray with foil and place a wire rack on top. Arrange the marinated pork strips on the rack, spacing them apart. Reserve the leftover marinade. Roast for 20 minutes, then flip and brush generously with the reserved marinade. Continue roasting another 15-20 minutes until the exterior is dark, sticky, and caramelized.
Rest and serve
Let the char siu rest for 5 minutes before slicing. Cut against the grain into thin pieces and serve warm.
